Merlot

Our Merlot grapes are hand-picked and carefully selected before processing. Fermentation and maceration last up to two weeks in fermenters at cooler temperatures, significantly enhancing the wine’s aromatic depth. After completing both alcoholic and malolactic fermentation under controlled conditions, part of the wine is aged in barrique barrels made from Slavonian, American, and French oak for up to six months, while the other part matures in stainless steel tanks. This dual aging process achieves an ideal balance between the wine’s structure, richness, and complexity from oak aging, and the elegance, lightness, and finesse provided by stainless steel maturation. Once aged, the wine is bottled and rests for at least three additional months before release.

Our Merlot grapes come from the premium vineyards of Drniš, situated on the edge of Petrova Polje. The warm, sun-drenched soils are cooled by the powerful bura wind, creating unique ecological conditions that help Vizzulin Merlot maintain its subtle elegance even in challenging, hot summers. In this distinctive microclimate, Vizzulin Merlot reveals a smooth, rounded, full-bodied character with a gorgeous fruit-forward aroma, exuding both refinement and sophistication.

For best enjoyment, serve at 18-20 °C, pairing perfectly with a range of roasts, steaks, red meat dishes, game, mature cheeses, and premium fish.
