Cabernet Sauvignon

Our grapes are hand-harvested, often as late as early November, to achieve optimal phenolic ripeness. The fermentation and maceration processes last between 7 to 10 days in temperature-controlled fermenters, enhancing the wine’s aromatic profile. After completing both alcoholic and malolactic fermentation under strictly controlled conditions, the wines are aged in two distinct ways—partially in barrique barrels for 6 to 18 months and partially in stainless steel tanks. This dual-aging approach is designed to balance the wine’s structure, fullness, and complexity gained from barrel aging with the elegance, lightness, and refinement provided by stainless steel maturation. Once aged, the wine is bottled and rests for at least three months before being released to the market.

Our grapes come from premier vineyards in the Drniš wine-growing region, located at the very edge of Petrova Polje. These vineyards benefit from warm, sunlit soils that are cooled by the powerful bura winds from Mount Promina. In these unique ecological conditions, Vizzulin Cabernet Sauvignon achieves an impressive balance of strength and elegance, even during hot and sunny summers. In this special microclimate, Vizzulin’s Cabernet Sauvignon displays a rich ruby-red color with a refined, juicy acidity that gives the wine its distinct elegance. It is distinguished by complex aromas of green pepper, blueberry, and cherry, exuding style and sophistication—ideal for special occasions.

For best results, serve at 18-20 °C with a variety of roasts, steaks, red meat dishes, game, mature cheeses, and premium fish.
