Dr. Cabernet Sauvignon

What lies behind the abbreviation Dr.? Is it a nod to the birthplace of Drniš, a tribute to a doctor, a scientist, or perhaps a master vintner? The final answer is yours to decide, but as they say, nomen est omen—the name speaks for itself.

Dr. wine is crafted from the Cabernet Sauvignon grape variety, which is hand-harvested and carefully selected before processing. In some years, the harvest takes place late in autumn to accommodate the grape’s later ripening period, with special attention paid to achieving ideal phenolic maturity. Fermentation and maceration last up to two weeks in fermenters at cooler temperatures, enhancing this wine’s aromatic richness while limiting tannin extraction. Following controlled alcoholic and malolactic fermentation, Dr. ages for 16 to 30 months in barrique barrels made from Slavonian, American, and French oak. Cabernet Sauvignon wines are often young and astringent, requiring extended aging to achieve balance and harmony. However, the high polyphenol content and tannins provide this wine with remarkable aging potential. Once barrel-aged, Dr. is bottled and matured for an additional six months before release, reaching its peak after five years.

Dr. reveals a deep, dark purple-red color. It offers a rich, full-bodied experience with a subtle freshness, showcasing a well-rounded structure with ripe and polished tannins. The aroma is fruity, blending ripe plum, cherry, and blackcurrant with spicy notes of green pepper, tobacco, and mint. Dr. pairs exceptionally well with grilled dishes, from meats to bluefish. Through careful aging and nurturing in oak barrels, we have crafted a unique wine for truly unique moments.
